Menu Plan Monday

I go weeks where I plan our weekly meals meticulously, write a detailed grocery list, and shop accordingly, but then for whatever reason I lose interest and go months without doing so at all. It makes such a difference stress-wise to know what I’m making for dinner ahead of time, and saves me a lot of money at the grocery store when I have a list to refer to. This is why I’m starting Menu Plan Monday! I need the accountability that I’ll get from posting my menu for the world to see. I have a huge stack of unread food mags, which is where I got the following ideas from.

  • Monday: Chicken and biscuits, with a spinach salad
  • Tuesday: Skirt steak with garlic potatoes
  • Wednesday: Pasta with roasted cauliflower
  • Thursday: Tater tot casserole (ground beef)
  • Friday: Herb-crusted salmon and baby spinach
  • Saturday: Apricot-glazed chicken and green beans
  • Sunday: Seared steak with broccoli gratin

The chicken and biscuits were a huge hit tonight! I also whipped up some yummy chocolate chip banana bread earlier this afternoon. Mmmmm… comfort food!

How do you figure out what to make for dinner every night?

    I make my menus but with 2 picky little eaters on my hands it’s mostly kid-friendly foods. We have quite a few dishes that I just rotate.

    That’s understandable! My four-year old is the same way. Last night she just had chicken and biscuits, literally. No veggies.

    That looks great! I love comfort food and I used to be good at doing weekly menus. I usually do whatever sounds good the night before because we don’t have a microwave to defrost things. We’ve been eating a lot of moose lately as we are stocked up for the winter and my freezers can’t hardly fit much more other meats!

    I really commend you on planning nutritious, interesting meals but that they are meals that are realistic as well. My family would actually eat them! Well done!

    I too make out my menus because without them I would likely come home from the store and not have a clue what to make from it! lol

    We do a fair amount of pasta dishes as my picky girls will actually eat them usually.

    Jacquie – I’ve never had moose. I’m thinking it tastes like venison, maybe? I would love to go to Alaska one day!

    Alyson – Thank you :) My four-year old is super picky…. my one-year old will eat anything her big sis leaves on her plate, though!
